Three Bean Vegetable Chili

2 Tbsp oil
4 stalks diced celery
1 1/2 c diced red bell pepper
2 c diced onion
8 cloves minced garlic
2 - 28 oz cans crushed tomatoes
1 c cooked black beans
1 c cooked navy beans
1 c cooked pinto beans
1 c beer
2 Tbsp chili powder
S & P

Saute first five ingredients over high heat in a heavy soup pot until just starting to get some color.   Add remaining ingredients and simmer over low heat for a t least and hour. Add salt and pepper to taste

This is a good recipe to put your own twist on. You could spice it up with a little cayenne or chipotle pepper. If you like it thinner just add some water. A few more vegetables wouldn't hurt either. Play around with it and have fun!
