Your recipe of the month June 2008 . . .

Creamy Avocado Sauce

This is a great cold sauce on tacos or as a dip with raw vegetables. You can also try this at the restaurant with our roasted vegetable enchiladas with black bean tomato salsa & queso fresco.

1 ripe avocado - peeled and pit removed
juice of 1/2 lime
1 clove minced garlic
1 Tbsp fresh cilantro
1/2 tsp cumin
1/2 cup sour cream
1/2 cup water
salt to taste

In a food processor puree avocado and lime juice until smooth.
Add remaining ingredients and puree until smooth  (you may have to scrape down the sides once or twice to get all the chunks ).
If made a day ahead make sure to lay a piece of plastic wrap directly on the surface of the sauce to prevent browning.
