Your recipe of the month August 2008 . . .

Herb mashed red potatoes

1 1/2 lb red potatoes
4 Tbsp butter
1/2 cup cream
2 Tbsp chopped parsley
2 Tbsp chopped basil
2 Tbsp chopped chives
2 Tbsp chopped thyme
Salt and pepper

Simmer potatoes in water until completely cooked through but not falling apart. 
Drain well.
Add remaining ingredients. 
Mix with a spoon until butter is melted and potatoes are mashed but still chunky.
Salt and pepper to taste. Yields 5- 6 servings
