Maple Ginger Glaze (for pork ribs)

1/2 cup diced onion
2 cloves minced garlic
2 Tablespoons minced ginger root
3/4 cup white wine
1 Tablespoon soy sauce
1/4 cup maple syrup
1 Tablespoon tomato paste

Simmer all ingredients over low heat for 10 - 15 minutes (thin with water if it gets too thick ).
Brush over ribs during the last 20 - 30 minutes of grilling or baking. 
The glaze should start to caramelize slightly around the edges of the ribs.
