Your recipe of the month April 2009 . . .

Thai Curry Coconut Sauce

2 Tbs. oil
1/2 cup diced onion
3/4 cup diced red pepper
3 cloves minced garlic
2 Tbsp. lime juice
1 Tbsp. red Thai curry paste
2 Tbsp. soy sauce
2 cans coconut milk

Heat oil in heavy sauce pan and saute onion, pepper and garlic for several minutes. 

Add remaining ingredients and simmer until slightly thickened.

This works well with shrimp, pork, chicken or beef.
